PEAR, ROASTED SWEET POTATO AND BLUE CHEESE SALAD

Welcome the autumn season with this delicious combination of favourites that delivers a feast for all the senses! Serve with BAKERS Provita® Crispbread as a wholesome midday snack or as a simple starter to impress the dinner guests that find themselves lucky enough to be seated at your table.

 

ingredients

Salad:

2 orange sweet potato, peeled and diced

1 tabelespoon (15ml) olive oil

Sea salt and freshly ground black pepper

A drizzle of honey

1 x Five Roses Green Tea teabag

1/2 cup (125 ml) boiling water

3 firm pears, sliced

50 g blue cheese, broken into chunks

Green Tea Black Pepper Sprinkle:

1 x Five Roses Green Tea teabag

Freshly ground black pepper

 

instructions

  1. Place the sweet potato in an ovenproof dish and drizzle with olive oil. Season with sea salt and freshly ground black pepper and drizzle with honey.

  2. Place the Five Roses Green Tea teabag into the boiling water for 2 minutes.

  3. Add 4 tbsp (60ml) green tea to the sweet potatoes and place in a preheated 200C oven for 20 minute or until soft and slightly caramalised.

  4. Place the roasted green tea sweet potatoes onto a serving platter, followed by the sliced pears and blue cheese. Drizzle with olive oil.

  5. For the Green Tea and Black Pepper Sprinkle, add a ½ a tsp (1.25ml) tea leaves to freshly ground black pepper. Mix well and dust onto the salad just before serving.
