ALMOND TART

The combination of BAKERS Blue Label® Marie biscuits and Frangelico in this decadent almond tart will see a lot of grownups rediscovering their love for this trusted childhood favourite.

Serves 6 – 8

ingredients

125 ml BAKERS Blue Label® Marie biscuit crumbs

90 ml nut liqueur (Frangelico)

65 ml soft butter

125 ml soft brown sugar

3 jumbo eggs

5 – 7 ml almond essence

125 ml ground almonds

1 x 24 cm short crust pastry case, pre-baked

125 ml smooth apricot jam

125 ml flaked almonds

instructions

  1. Pre-heat oven to 190 ˚C.
  2. Place the BAKERS Blue Label® Marie biscuit crumbs in a bowl and add the liqueur.  Mix well and set aside.
  3. Cream the butter and sugar and add the eggs and almond essence to taste.  Beat well.
  4. Add the liqueur-soaked crumbs and ground almonds and mix well.
  5. Spread the crust with apricot jam, spoon in the filling and smooth the surface. Sprinkle with the flaked almonds.
  6. Bake for 20 – 25 minutes in the oven  or until golden and cooked.
  7. Serve warm with cream.
  8. If you don’t want to use alcohol, then replace the Frangelico with sweetened rooibos tea for a healthy alternative.

  1. Meng die BAKERS Blue Label® Marie beskuitjiekrummels en likeur saam in ’n bak en sit eenkant.
  2. Verroom die botter en suiker. Voeg die eiers een vir een by en klop goed na elke byvoeging. Meng die geursel in.
  3. Voeg die likeur-geweekte krummels en fyngemaalde amandels by en meng goed. Smeer die gebakte kors met appelkooskonfyt en skep die vulsel in. Maak die oppervlak gelyk en strooi die gevlokte amandels bo-oor.
  4. Bak vir 20 – 25 minute in ’n voorverhitte oond teen 190 oC of tot goudbruin en gaar. Bedien warm met room.
  5.  Indien jy nie alkohol wil gebruik nie, kan jy die Frangelico met versoete rooibostee vervang.
