ASPARAGUS QUICHE

A great BAKERS® take on Asparagus Quiche! Using BAKERS® Cream Crackers in the base makes this one delicious Asparagus Quiche !

Serves 6 – 8

ingredients

50 g (¼ pack) BAKERS® Cream Crackers

125 ml cake flour

125 g butter

5 ml mustard powder or pinch cayenne pepper

pinch salt

100 g mature cheddar cheese, coarsely grated

1 x 420 g can asparagus tips

3 jumbo eggs

30 ml corn flour

150 ml fresh cream

65 ml finely chopped chives or parsley

15 ml Dijon mustard (optional)

salt and milled black pepper

instructions

  1. Pre-heat oven to 190 ºC.
  2. To make this delicious Asparagus Quiche start by placing the BAKERS® Cream Crackers in a processor and process into fine crumbs. Add the flour, butter, mustard powder or cayenne pepper and salt. Pulse until the mixture resembles breadcrumbs.
  3. Add the cheese and pulse until the cheese is incorporated. Don’t be tempted to over-process the mixture even though it may still appear crumbly.
  4. Tip the mixture into a greased 36 x 12 cm loose-bottomed flan tin (it’s the slim, oblong shape – very pretty to look at).
  5. Push the mixture firmly into the bottom and sides of the tin, place the tin onto a baking sheet and place in the fridge to chill well.
  6. Drain the asparagus but reserve 125 ml of the canning liquid. Arrange the asparagus tips in the bottom of the crust. Beat together the reserved canning liquid, eggs, corn flour, fresh cream, herbs and mustard (if using). Season to taste and pour mixture into crust.
  7. Bake in the oven for 40 – 45 minutes or until the filling is set.
  8. Remove from oven and allow to cool a little before turning out onto a serving platter.

5 ml mostertpoeier of ’n knippie rooipeper

knippie sout

100 g beleë cheddarkaas, grof gerasper

1 x 420 g blikkie aspersiepunte

3 jumbo eiers

30 ml mielieblom

150 ml room

65 ml fyngekapte grasuie of pietersielie

15 ml Dijon mostert (opsioneel)

sout en gemaalde swartpeper

instruksies

  1. Verkrummel die BAKERS Cream Crackers in ’n voedselverwerker. Voeg die koekmeel, botter, mostertpoeier of rooipeper en sout by. Verwerk net tot dit soos growwe broodkrummels lyk.
  2. Voeg die kaas by en verwerk tot die kaas ingemeng is. Gooi die mengsel uit op ’n gesmeerde 36 x 12 cm-losboompan (dit is die maer, langwerpige vorm) en druk dit stewig op die boom en teen die kante van die pan. Plaas dit op ’n bakplaat en verkil.
  3. Dreineer die aspersies maar behou 125 ml van die vloeistof. Rangskik die aspersies op die kors. Klits die vloeistof, eiers, mielieblom, room, kruie en Dijon mostert (indien gebruik) saam. Geur na smaak en giet die mengsel in die tertkors.
  4. Bak in ’n voorverhitte oond teen 190 ºC vir 40 – 45 minute of tot die vulsel gestol het.
  5. Verwyder van oond en laat effens afkoel voordat dit uit die pan verwyder word. Bedien warm.

  1. Faka amabakers cream crackers kumushini wokugaya ugaye kubeizimvuthu.Hlanganisa ufulawa, ibhotela, umasitadi noma upepper wecayenne nosawoti. Qubeka ugaye izeinhlanganiso ifane nezimvuthu zesinkwa. Hlanganisa ushizi ugaye futhi kuze kuhlangane.
  2. Ungayi gayi kakhulu inhlanganiso yako. Ifake endishini yokubhaka egcobiswe amafutha ewu 36 x 12cm loose bottomed flan tin.
  3. Cindezela inhlanganiso phansi nasemaceleni endishi eyikani, ubeke ikani eshidini lokubhaka ufake efrijini kona kuzo banda.
  4. Khama iasparagus ucine amanzi azekanini awu 125 ml. Hlela iasparagus phansi kuqweqwe. Hlanganisa amanzi asele ekanini namaqanda, ufulawa wombila, ukhilimu, imthombo nomasitadi (uma uthanda). Faka izinongo ubese uthela lehlanganiso phakathi kuqweqwe.
  5. Bhaka kuhovini osezingeni la190 amaminithi awu 40 – 45. Susa kuhovini uyeke kuphole phambi kokuthi uyikephele eplatini loku phaka.
