BACON CROQUETTES

This Bacon Croquettes recipe is a delightful BAKERS twist on the traditional potato croquette! You can’t go wrong, you will love them and so will your kids.

ingredients

100 g (½pack) BAKERS Kips® Bacon flavoured crackers

4 small sprigs parsley

500 ml firm mashed potatoes, well seasoned

45 ml sour cream

125 ml grated cheddar cheese

30 ml finely chopped rosemary (optional)

30 ml finely chopped parsley

8 strips streaky bacon, crisply cooked and finely chopped

salt and milled black pepper

2 eggs, beaten

oil for frying

 

instructions

  1. Place the BAKERS Kips® crackrs and parsley in a processor and process into fine crumbs. Transfer to a shallow dish.
  2. Lightly mix together the mashed potato, cream, cheese, rosemary (if using), parsley and bacon. Season to taste with salt and pepper.
  3. Shape the mixture into 20 – 24 croquettes.
  4. Dip each croquette first in the egg and then roll it in the biscuit crumbs, ensuring that it is well coated with the crumbs.  Repeat the process until all the croquettes are made then place in the fridge to firm for at least 20 minutes.
  5. To cook, heat 2 cm of oil in a frying pan and cook a few croquettes at a time on all sides until golden brown and crispy.
  6. Drain on paper towel before serving.

500 ml fyngedrukte, gaar aartappels

45 ml suurroom

125 ml gerasperde cheddarkaas

30 ml fyngekapte roosmaryn (of 10 ml gedroogde roosmaryn)

30 ml fyngekapte pietersielie

8 repies strepiespek, gebraai tot krakerig en fyngekap

2 eiers, geklits

olie om in te braai

  1. Sit die BAKERS Kips® saam met die pietersielietakkies in ’n voedselverwerker en verwerk tot fyn.
  2. Gooi dit oor in ’n vlak bak. Geur die aartappels mildelik met sout en peper en meng dit met die suurroom, kaas, roosmaryn, die 30 ml fyngekapte pietersielie en spek.
  3. Maak 20 – 24 krokette, so groot soos ’n vet sigaar. Doop elke kroket eers in die eier en rol dit dan in die beskuitjiekrummels.
  4. Plaas in die yskas tot ferm (20 minute).
  5. Om gaar te maak, verhit (tot omtrent 170 ºC) 2 cm olie in ’n braaipan en braai ’n paar krokette op ’n slag aan alle kante tot goudbruin en bros.
  6. Dreineer en bedien.
