Bacon & Pork Parcels with Sweet & Sour Chutney Sauce

If you’re a fan of ‘Angels on horseback’, then boy, are you in for a surprise! Bakers Pro-Vita Multigrain Crispbread, pork sausages and a dash of sweet chilli spice put a welcome new spin on these old favourites!

Ingredients

  • 65 g (1/4 pack) Pro-Vita Multigrain Crispbread
  • 300 g pork sausages, casings removed
  • 45 ml finely chopped parsley
  • 45 ml sweet chilli sauce
  • salt and milled black pepper
  • 250 g streaky bacon
  • 200 ml bought sweet and sour sauce
  • 90 ml chutney (mild or hot)
  • 1 whole spring onion, finely sliced

Directions
Place the Pro-Vita Multigrain Crispbread in the processor and process into coarse crumbs.
Tip the crumbs into a mixing bowl and add the sausage meat, parsley, sweet chilli sauce and season lightly with salt and pepper. Roll into balls the size of large walnuts. Cut the bacon strips in half lengthwise and loosely roll a piece of bacon around each mince ball. Don’t wrap too tightly as the bacon will shrink during cooking. Secure with toothpicks if necessary.
Place the parcels on a baking sheet with the seams at the bottom. Bake in the oven preheated to 200 ºC for 10 – 15 minutes or until the mince is cooked through.
Meanwhile, combine the sweet and sour sauce, chutney and spring onion and serve with the warm parcels.
