BALSAMIC ONION AND CAMEMBERT TARTLETS

Perfect for canapés and treating your guests!  These delicious tartlets made with BAKERS Wheatsworth® crackers will have your guests wanting more.

Serves 8 or more

 

ingredients

Pastry

200 ml Flour

100 ml BAKERS Wheatsworth® crackers made into fine crumbs

60 g butter

1 egg yolk

ice water

Filling

30 ml olive oil

30 ml butter

3 large onions, thinly sliced

65 ml Sugar

150 ml Balsamic vinegar

2 x 125g Camembert cheeses, cut into wedges

Garnish

Fresh rocket leaves

 

instructions

  1. Pre-heat oven to 180⁰C.
  2. Heat oil and butter and sauté onion until lightly browned.
  3. Add sugar and caramelise over high heat.
  4. Reduce heat, add Balsamic vinegar and cook slowly until mixture becomes sticky.
  5. Leave to cool.
  6. Place flour, BAKERS Wheatsworth® cracker crumbs and butter in a food processor.
  7. Blend until mixture resembles fine crumbs.
  8. Mix egg yolk with enough water to form a soft dough.
  9. Press out into 12 greased tartlet pans.
  10. Bake for 8 minutes or until golden.
  11. Dish the onion mixture evenly between the pastry cases.
  12. Top with a wedge of a Camembert cheese and fresh rocket.
