BERRY JELLY POT

These healthy and tasty desserts using BAKERS Blue Label® Marie biscuits, are a delicious summer treat for the whole family. They’re also a fun and easy way for the kids to get involved in the kitchen! Let them experiment with various jelly flavours, jams and fruits in season to make up a rainbow of new and exciting jelly pot tastes.

Serves 8

 

ingredients

1½ x 80 g packets of strawberry or raspberry jelly

225 ml boiling water

325 ml clear berry juice (or cold water)

400 g mixed berries, hulled, rinsed and drained

16 small mint leaves

8 BAKERS Blue Label® Marie biscuits

You can use small coffee cups, glasses or ramekins if you’re fresh out of dariole moulds!

 

instructions

  1. Place the jelly powder in a bowl and add the boiling water. Stir until the crystals have dissolved. Stir in the berry juice or cold water.
  2. Spray 8 x 150 ml capacity dariole moulds with non-stick spray and pour about 1 cm of jelly liquid into the moulds. Place in the freezer until the layer of jelly is firm, about 15 minutes.
  3. Pat the berries dry and place equal portions into the moulds. Carefully pour the remaining jelly mixture over the fruit. Insert two mint leaves into each mould.
  4. Spread the BAKERS Blue Label® Marie biscuits thickly with some strawberry jam and place on top of the jelly in the moulds, the jam side facing down. Place in the fridge to set for 2 – 4 hours.
  5. Just before serving, un-mould the jellies onto serving plates, with the biscuit forming the base, and serve.

225 ml kookwater

325 ml helder bessiesap (of koue water)

400 g gemengde bessies (skoongemaak, gewas en gesny)

  1. Meng die jelliepoeier met die kookwater totdat die kristalle opgelos is. Roer die bessiesap of koue water by.
  2. Spuit 8 bakkies van 150 ml elk met kleefvrye sproei en giet ongeveer 1 cm van die jellievloeistof in elke bakkie. Sit hulle in die vrieskas totdat die jellielaag gestol is, ongeveer 15 minute.
  3. Druk die bessies liggies droog en sit ’n porsie in elke bakkie. Maak seker dat die orige jellievloeistof afgekoel is en giet dit oor die bessies. Druk die kruisementblare tussen die bessies in.
  4. Smeer ’n dik laag aarbeikonfyt oor die BAKERS Blue Label® Marie beskuitjies en sit elkeen met die konfytkant na onder bo-op die jellie. Verkil vir 2 – 4 ure om te stol. Dop die jellies om op bordjies sodat die beskuitjie die basis vorm en bedien.
  5. NS: Indien jy granate in die hande kan kry, strooi die pitte oor die jellies voor opdiening. Die pitte se krakerige tekstuur is heerlike afwisseling vir die sagte jellie.
