BIRTHDAY CAKE COOKIE SANDWICHES

Feel like a kid again with this wonderful recipe for Birthday Cake Cookie Sandwiches, which are made using BAKERS Tennis® biscuits! Complete with coloured sprinkles and vanilla frosting, they’re everything that a birthday cake ought to be!

For the cake:

2 ½ cups flour

¼ cup maizena

½ tsp salt

2 tsp baking powder

230g unsalted butter at room temperature

1 ½ cups castor sugar

3 large eggs

¼ cup sunflower/canola oil

1 tbsp vanilla essence

¾ cup full-cream milk

½ cup rainbow sprinkles

For the frosting:

400g unsalted butter

3 cups icing sugar (sifted)

2 tsp vanilla essence

2 tbsp full-cream milk

To assemble:

1 pack Tennis Biscuits

Rainbow sprinkles

For the cake:

  1. Preheat your oven to 180 C and grease and line a large rectangular baking tin.
  2. In a mixing bowl, add the flour, maizena, salt and baking powder and whisk together to combine.
  3. Using a stand mixer fitted with the paddle attachment, cream the butter and sugar on medium-high until light and fluffy, approximately 4-5 mins. Scrape down the sides of the bowl.
  4. Add in the eggs, one by one, making sure they are fully incorporated before each addition. Scrape down the sides of the bowl.
  5. Add in the oil and vanilla and mix until well combined.
  6. Turn your mixer down to low and alternate adding in the flour and milk until your mixture has only just come together, be careful not to over mix. Fold in your rainbow sprinkles.
  7. Pour your mixture into your prepared baking dish and bake for 30 mins or until you insert a toothpick and it comes out clean.

For the frosting:

  1. While your cake is in the oven, you can begin your frosting. Add your butter to the bowl of a stand mixer and using the paddle attachment, beat until smooth. Gradually add in the icing sugar until your mixture has no lumps. Add in the vanilla and milk and continue mixing until your light is nice and fluffy.

To assemble:

  1. Once your cake has come out the oven, allow it to cool for 10 mins in the tin. Remove from the tin and allow it to cool completely.
  2. Once cooled, place a tennis biscuit of the cake, and using it as a template, cut out squares to match the biscuit size.
  3. Lay down enough tennis biscuits for the bottoms and tops of your sandwiches and spread some frosting on top to create your sandwich layers.
  4. Place a piece of cake on each of the bottom layers and add on their tops. Spread the tops of the sandwiches with more frosting and finish off with some rainbow sprinkles.

150 g (3⁄4 pakkie) BAKERS Tennis® beskuitjies

200 g geroomde maaskaas

125 ml ligte bruinsuiker

3 groot eiers

125 ml bruismeel

75 g opgekapte okkerneute

65 ml gemengde sitrusskil

65 ml droë klapper

5 ml bakpoeier

5 ml gemengde speserye

3 ml sout

  1. Verkrummel die BAKERS Tennis® beskuitjies in ’n voedselverwerker tot fyn. Verroom die maaskaas en suiker in ’n bak. Klits die eiers een-vir-een by en voeg telkens ook ’n paar eetlepels bruismeel by tot als opgebruik is.
  2. Roer die neute, gemengde skil en 45 ml van die klapper ook by. Sif die oorblywende bruismeel, bakpoeier, gemengde speserye en sout by die mengsel. Strooi die beskuitjiekrummels bo-op en vou liggies in.
  3. Skep die mengsel in ’n klein gesmeerde broodpan en besprinkel met die oorblywende klapper. Bak in ’n voorverhitte oond teen 180 oC vir 50 minute tot ’n uur of tot gerys en gaar. Verwyder van oond en laat staan vir 5 minute.
  4. Keer dit dan uit op afkoelrakkie. Bedien in snye met vanielje-botter.
