BLACK CHERRY CHEESECAKE TART

It may take a little extra time to make this special dessert but it will be well worth the effort. Using BAKERS Tennis® biscuits as its base, this recipes fruity topping can be varied to suit your individual taste.

Serves 6 – 8

 

ingredients

1 x 200 g packet of BAKERS Tennis® biscuits

125 ml melted butter

500 ml milk

1 jumbo egg

2 egg yolks, (extra)

45 ml cake flour

45 ml corn flour

125 ml castor sugar

45 ml Cointreau liqueur or 5 ml orange essence

2 x 410 g cans black cherries without stones

65 ml smooth apricot jam

20 ml corn flour (extra)

30 ml (extra) Cointreau liqueur (optional)

45 ml orange zest

hints

If you consider the cost of the cherries, use any other canned or fresh fruit instead. Peach slices teamed with kiwifruit would be great. And a simple glaze of heated apricot jam would work wonders by adding a glossy crown to your tart.

instructions

  1. Place the BAKERS Tennis® biscuits in a processor and process into fine crumbs. Add the butter and pulse until combined.
  2. Push the mixture into the bottom and sides of a greased 24 cm loose-bottomed flan ring and set aside.
  3. Whisk half of the milk with the whole egg, egg yolks, cake flour, corn flour and sugar. Heat the rest of the milk and gradually add the egg mixture. Whisk over medium heat until the mixture thickens. Stir in the liqueur or orange essence and pour into the crust. Set aside to cool completely.
  4. To complete, drain the cherries, reserving 180 ml of the juice. Arrange the cherries on top of the tart.
  5. Heat the juice and apricot jam. Mix the extra corn flour with a little cold water and whisk just enough of the paste into the liquid to create a medium-thick sauce. Add the extra liqueur if using then spoon the sauce over the cherries.
  6. Garnish with the orange zest and allow to cool completely before turning out and serving.

  1. Verkrummel die BAKERS Tennis® beskuitjies in ’n voedselverwerker. Voeg die botter by en meng goed. Druk die mengsel stewig vas teen die kante en die boom van ’n gesmeerde 24 cm-losboom randkoekpan.
  2. Klits die helfte van die melk saam met die jumbo eier, eiergele, koekmeel, mielieblom en suiker. Verhit die orige melk en voeg die eiermengsel bietjie vir bietjie by. Klop dit aanhoudend oor matige hitte todat die mengsel verdik. Roer die likeur of geursel by en giet die mengsel in die kors. Sit eenkant om heeltemal af te koel.
  3. Dreineer die kersies maar behou 200 ml van die sap. Rangskik die kersies bo-op die tert. Verhit die orige sap en appelkooskonfyt. Meng die ekstra mielieblom met ’n klein bietjie koue water en roer net genoeg hiervan by die sap in om ’n medium-dik sous te maak. Voeg die ekstra likeur by (indien gebruik) en skep die sous oor die kersies. Versier dit met die fyn repies lemoenskil en laat heeltemal afkoel voor opdiening.
  4. NS: Kersies is redelik duur. Jy kan dit vervang met enige goedkoper soort ingelegde of vars vrugte. ’n Eenvoudige lagie verhitte appelkooskonfyt oor die vrugte geverf doen ook wondere om die tert met ’n tikkie glans te bekroon
