BUTTERNUT & BLUE CHEESE STRUDEL

These warm Butternut & Blue Cheese Strudels made using BAKERS Kips® crackers are surprisingly easy to make.  One bite and your guests will think you’re a gourmet chef!

sugar for sprinkling

250 ml small cubes of mozzarella cheese

90 – 125 ml crumbled blue cheese

65 ml finely chopped parsley

1 roll puff pastry, thawed

1 egg beaten with a spoonful of milk

dried pumpkin seeds for sprinkling (optional)

Garnish

fresh rocket leaves

 

instructions

  1. Pre-heat oven to 190 ºC
  2. Crush the BAKERS Kips® crackers coarsely and set aside until required.
  3. Heat the olive oil and butter in a frying pan and add the butternut. Sauté until lightly browned, add a large spoonful of water and simmer until it’s just cooked but still firm and cube-shaped.
  4. Season with salt, pepper and a sprinkling of sugar then transfer to a mixing bowl.  Allow to cool.
  5. Add mozzarella and blue cheese, parsley and crumbs and mix lightly.
  6. Place the puff pastry on a floured board and spoon the butternut mixture along the length of the pastry.
  7. Roll up like a sausage roll with the filling in the middle and press the two ends closed.
  8. Place the strudel on a greased baking sheet with the seam at the bottom.
  9. Brush all over with the egg mixture then using a sharp knife, make 8 small slits on top of the strudel.
  10. Sprinkle with pumpkin seeds (if using). Bake in the oven for 20 – 30 minutes or until the pastry is golden and crisp.
    Slice through where the slits were made and serve warm, garnished with rocket.

15 ml olyfolie

15 ml botter

500 ml kleingesnyde botterskorsie

sout en gemaalde swartpeper

’n klein bietjie suiker

250 ml blokkies mozzarellakaas

90 – 125 ml gekrummelde bloukaas

65 ml fyngekapte pietersielie

1 rol skilferkorsdeeg, ontdooi

1 eier, saam met ’n lepel melk geklits

’n paar gedroogde pampoenpitte (opsioneel)

  1. Druk die BAKERS Kips® grofweg stukkend en sit eenkant tot benodig. Verhit die olyfolie en botter in ’n braaipan en voeg die botterskorsie by.
  2. Soteer tot ligbruin, voeg ongeveer 45 ml water by en prut tot gaar, maar ferm. Geur met sout, peper en ’n bietjie suiker en gooi oor in ’n mengbak. Laat dit goed afkoel en voeg die mozzarella- en bloukaas, pietersielie en krummels by. Meng ligweg.
  3. Rol die skilferkorsdeeg ietwat dunner uit en skep die botterskorsiemengsel op die lang kant van die deeg. Rol dit op soos ’n worsrolletjie met die vulsel in die middel en druk die punte stewig vas. Sit die strudel op ’n gesmeerde bakplaat met die naat na onder.
  4. Verf die eiermengsel bo-oor. Maak 8 kepies met ’n mes skuins oor die bokant van die strudel. Strooi die pampoenpitte bo-oor (indien gebruik).
  5. Bak in ’n voorverhitte oond teen 190 ºC vir 20 – 30 minute of tot die deeg goudkleurig en bros is. Sny dit deur die kepies wat gemaak is en bedien warm saam met ’n hopie roketblare.

  6. Sika kube izicwezu uphake kufudumele, uhlobise ngerocketi.
