CHEESY CHICKEN STRIPS WITH CREAMY TOMATO SAUCE

These cheesy chicken strips, using BAKERS Kips® crackers to crumb, are a delicious, low oil alternative to fried chicken. Ideal on a snack platter or for a yummmmy lunch treat to fill up little tummys!

Chicken strips

3 chicken breast fillets

salt and milled black pepper

250 ml plain buttermilk

100 g (½ pack) BAKERS Kips® Spring Onion flavoured crackers

65 ml freshly grated parmesan or mature cheddar cheese

65 ml finely chopped parsley

Dipping sauce

125 ml fresh cream

125 ml mayonnaise

65 ml tomato sauce

4 whole spring onions, finely chopped

Chicken strips

  1. Pre-heat oven to 190 ºC.
  2. Slice the chicken into thin strips. Flatten each strip of chicken with a rolling pin or a mallet.
  3. Place in a glass bowl and season well with salt and pepper. Add the buttermilk and stir. Allow to marinate for 10 minutes.
  4. Place the BAKERS Kips® crackers in the processor and process into fine crumbs. Add the parmesan or mature cheddar cheese and parsley and pulse until combined. Transfer to a shallow dish.
  5. If necessary, drain the chicken pieces lightly and dip them in the crumbs, making sure they are properly coated. Arrange them in a single layer on an oiled baking sheet.
  6. Bake in the oven  for 8 minutes or until cooked and golden.

Dipping Sauce

  1. Meanwhile, combine the rest of the ingredients and spoon into a serving bowl.
  2. When the chicken is cooked to your liking, arrange on a platter and serve with the dipping sauce on the side.

  1. Sny die hoender in dun repies. Rol of kap elke repie plat met ’n koekroller of ’n vleishamer.
  2. Plaas dit in ’n glasbak en geur goed met sout en peper. Voeg die karringmelk by en roer. Laat dit marineer vir 10 minute.
  3. Verkrummel die BAKERS Kips® in die voedselverwerker. Voeg die parmesaan- of cheddarkaas en pietersielie by en verwerk. Gooi dit oor in ’n vlak bak.
  4. Indien nodig, dreineer die hoenderstukkies en doop dit in die krummels. Maak seker dat die repies volkome met die krummels bedek word.
  5. Rangskik die repies in ’n enkellaag op ’n gesmeerde bakplaat en bak in ’n voorverhitte oond teen 190 ºC vir 8 minute of tot gaar.
  6. Meng dan die res van die bestanddele en skep dit oor in ’n opdienbakkie. Sodra die hoender gaar is, rangskik dit op ’n opdienbord en bedien dit saam met die doopsous.
