These courgette fritters are great for canapes to impress your guests using BAKERS® Cream Crackers.

Serves 8 or more



400 g courgettes, grated

6 spring onions, finely chopped

200 g feta cheese, crumbled

25 ml chopped parsley

250 ml BAKERS® Cream Crackers crumbs

Salt and pepper

A pinch of cayenne pepper

3 XL eggs, beaten

Oil for shallow frying

For serving:

125 ml crème fraiche

100 g smoked salmon

dill for garnish

lemon wedges



  1. Dry out courgettes on paper towel an set aside.
  2. Mix together all remaining ingredients and leave to stand for 20 minutes.
  3. Add courgettes and mix well.
  4. Heat oil in a large frying pan and drop heaped dessert spoons of mixture into hot oil. Flatten slightly.
  5. Fry both sides until golden brown and drain on paper towels.
  6. Serve at room temperature topped with crème fraiche and a ruffle of smoked salmon
  7. Garnish with dill and lemon wedges
