LAMB STICKS WITH TZATZIKI

Use BAKERS® Cream Crackers to create this sumptuous Greek-style lamb dish with tzatziki! Ideal to serve on a meze platter with pitas or with a crisp green salad as a light and flavour-filled summer lunch!

Makes 12 – 16

ingredients

Lamb Sticks

6 BAKERS® Cream Crackers

125 ml warm milk

5 ml cumin seeds, toasted

5 ml coriander seeds, toasted

300 g minced lamb (beef would also do)

30 ml very finely chopped onion

10 ml ground cinnamon

5 – 10 ml red chilli flakes

salt and milled black pepper to taste

oil for frying

small meat skewers

Tzatziki

125 ml seeded and finely chopped cucumber

250 ml Greek yogurt

45 ml finely chopped mint

30 ml finely chopped parsley

Lamb Sticks

  1. Crush the BAKERS® Cream Crackers into coarse crumbs and place in a large bowl. Stir in the milk and set aside.
  2. Crush the toasted seeds coarsely and add to the biscuit mixture together with the meat, onion, cinnamon and chilli flakes. Season liberally with salt and pepper and mix well. Shape large bite-size portions of the mixture around one end of small meat skewers. Set in the fridge to chill for about 20 minutes.
  3. Just before serving, fry the meat (on the sticks) in a little hot oil until cooked and golden.
  4. Drain well on paper towel, arrange on a platter and serve warm with the tzatziki on the side.

Tzatziki

  1. To make the tzatziki, pat the cucumber quite dry and place in a bowl. Add the yogurt, mint and parsley and season with salt and pepper.
  2. Mix and chill until ready to serve.

300 g gemaalde lamsvleis (beesvleis kan ook gebruik word)

30 ml fyngekapte ui

10 ml fyn kaneel

5 – 10 ml rooi brandrissievlokkies

sout en gemaalde swartpeper

125 ml ontpitte en fyngekapte komkommer

250 ml Griekse joghurt

45 ml fyngekapte kruisement

30 ml fyngekapte pietersielie

olie om in te braai

  1. Druk die Bakers Cream Crackers in growwe stukkies en sit in ’n groot bak. Roer die melk by en laat dit week vir ’n paar minute.
  2. Voeg die sade, vleis, ui, fyn kaneel en brandrissievlokkies by die beskuitjiemengsel. Geur goed met sout en peper en meng deeglik. Neem klein porsies van die mengsel en druk elke porsie soos ’n worsie deeglik vas aan een kant van elke sosatiestokkie. Verkil vir 20 minute.
  3. Maak dan die tzatziki. Druk die komkommer taamlik droog en sit in ’n bak. Voeg die joghurt, kruisement en pietersielie by. Geur met sout en peper. Meng en verkil.
  4. Braai die vleis (op die stokkies) (net voor opdiening) in ’n bietjie warm olie tot gaar en goudbruin. Dreineer en rangskik op ’n bord. Bedien warm met die tzatziki.

  1. Buthuza amabakers cream crackers abeimvuthu uwafake endishini enkhulu. Hlanganisa nobisi ubeke eceleni.
  2. Buthuza imbewu ethosiwe uyifake kwimvuthu zamabhisikidi uhlanganise neyama, noayanisi, ucinnamoni nopelepele. Faka izinongo nosawoti nepepper uhlanganise kahle.
  3. Tata inhlanganiso uyisonga ibe amabola amcane uyihlome endukwini. Beka efrijini amaminithi awu 20.
  4. Ukwenza itzatziki, faka icucumber endishini. Faka iyogurti, uminiti, noparsley nezinongo zosawoti nepepper. Hlanganisa ufake efrijini. Uma usuzo phaka thosa inyama ehlomiwe emafutheni amancane useumbala ube igolide. Khama inyama ngetowula, hlela eplatini uphake kufudumele netzatziki eceleni.
