LEMON CHEESECAKE

This no-nonsense cheesecake recipe is a timeless classic that uses BAKERS Blue Label® Marie biscuits as its base.

Serves 8 – 10

 

ingredients

1½ x 200 g packets of BAKERS Blue Label® Marie biscuits

180 ml melted butter

90 ml lemon zest

2 x 250 g creamed cottage cheese

2 x 385 g cans condensed milk

125 ml lemon juice

200 ml sugar

 

instructions

  1. Pre-heat the oven to 150oC.
  2. Place the BAKERS Blue Label® Marie biscuits in a processor and process to fine crumbs. Add the melted butter and half of the lemon zest and pulse until combined. Push the mixture into the bottom and sides of a greased 32 cm  loose-bottomed flan ring.
  3. Whisk together the creamed cottage cheese, condensed milk and lemon juice and pour into the crust. Bake in the oven for 20 minutes. Remove from the oven and set aside to cool in the flan ring.
  4. Meanwhile, heat the sugar over medium heat until melted and golden brown. Add the remaining lemon zest and immediately remove from heat. Using a small whisk or a fork, swirl or drizzle thin strands of the sugar mixture over the top of the cheesecake.
  5. Allow the sugar topping to cool completely and harden before removing the cake from the flan ring.

180 ml gesmelte botter

90 ml fyn repies suurlemoenskil

2 x 250 g geroomde maaskaas

2 x 385 g blikkies kondensmelk

125 ml suurlemoensap

200 ml suiker

  1. Verkrummel die BAKERS Blue Label® Marie beskuitjies in ’n voedselverwerker. Voeg die gesmelte botter en helfte van die fyn repies suurlemoenskil by en meng goed. Druk die mengsel op die boom en teen die kante van ’n gesmeerde 32 cm-deursnee losboom randkoekpan.
  2. Klits die geroomde maaskaas, kondensmelk en suurlemoensap saam. Giet dit in die kors. Bak in ’n voorverhitte oond teen 150 oC vir 20 minute of totdat die vulsel begin stol. Verwyder die kaaskoek uit die oond maar los dit in die pan om volkome af te koel.
  3. Om die koek te voltooi, verhit die suiker oor matige hitte tot gesmelt en goudbruin. Roer die orige fyn repies suurlemoenskil by en verwyder dadelik van die plaat. Met behulp van ’n vurk of draadklopper, drup dun straaltjies van die mengsel bo-oor die kaaskoek. Sodra die suikermengsel afgekoel en verhard het, kan die kaaskoek van die pan verwyder en bedien word.
