LEMON DREAM TART

This zesty fresh meringue dessert using BAKERS Red Label® Lemon Cream biscuits is the ideal finale to an ‘al fresco’ summer lunch or a sophisticated garden party. It’s the perfect combination of sour and sweet, crunchy and creamy. Dreamy.

Serves 6

8 BAKERS Red Label® Lemon Cream biscuits

3 large egg whites

250 ml sugar

5 ml baking powder

250 ml fresh cream

15 ml grated lemon rind

65 ml castor sugar

90 ml lemon curd

65 ml sugared lemon zest

edible flowers (optional)

 

instructions

  1. Pre-heat oven to 100 °C.
  2. Break the BAKERS Red Label® Lemon Cream biscuits into small pieces and set aside. Beat the egg whites into stiff peaks. Add the sugar gradually, beating after each addition.
  3. Continue beating until the mixture is thick and glossy then fold in the biscuit pieces and baking powder.
  4. Line a baking sheet with baking paper and fashion the mixture into a tart-shaped round on the paper. With the back of a spoon, make a shallow indent in the centre of the mixture.
  5. Bake on the middle rack of the oven for an hour or until light and crisp. Turn the heat off and leave the meringue in the oven with the door slightly open for a further 30 minutes.
  6. Remove from the oven and allow to cool completely.Just before serving beat together the fresh cream, lemon rind and castor sugar until stiff. Pile into centre of tart shell.
  7. Drizzle with lemon curd and garnish with sugared lemon zest and if using, edible flowers.

250 ml suiker

5 ml bakpoeier

250 ml room

15 ml gerasperde suurlemoenskil

65 ml strooisuiker

90 ml suurlemoensmeer

65 ml versuikerde fyn repies suurlemoenskil

eetbare blomme (opsioneel)

 

instruksies

  1. Breek die BAKERS Red Label® Lemon Creams in klein stukkies en sit eenkant. Klits die eierwitte tot stywe punte. Voeg die suiker geleidelik by en klits na elke byvoeging.
  2. Hou aan om te klits totdat die mengsel dik en blink is. Vou die beskuitjiestukke en bakpoeier in. Voer ’n bakplaat uit met bakpapier.
  3. Gooi die mengsel uit op die papier en met behulp van die agterkant van ’n lepel, fatsoeneer dit in ’n ronde vorm. Maak ’n vlak holte in die middel van die mengsel met die agterkant van die lepel.
  4. Bak dit op die middelste rak van ’n voorverhitte oond teen 100 °C vir ’n uur of tot gaar. Skakel die oond af maar los die meringue in die oond vir ’n verdere 30 minute met die oond se deur effens oop.
  5. Haal dit uit en laat behoorlik afkoel op ’n draadrak. Om te bedien, klits die room, suurlemoenskil en strooisuiker saam tot styf. Skep dit in die holte van die tert.
  6. Bedruip met suurlemoensmeer, versier met versuikerde fyn repies suurlemoenskil en eetbare blomme (indien gebruik).
