MINCE & BEAN BALLS WITH SWEET CHILLI SAUCE

Forget Granny’s frikkadells – BAKERS Salticrax® crackers make these mince balls anything but ordinary! These scrummy mince and bean balls are perfect for lunchboxes or as a fantastic meze snack platter addition.

Makes about 18 – 24

ingredients

100 g (½pack) BAKERS Salticrax® Black Pepper flavoured crackers

4 sprigs parsley

250 g lean beef mince

250 ml canned red kidney beans, drained and coarsely mashed

125 ml finely sliced green spring onion tops

10 ml cumin seeds, toasted and ground

10 ml coriander seeds, toasted and ground

65 ml plain low-fat yoghurt

packet brown onion soup powder

sunflower oil for frying

125 ml chopped coriander leaves

250 ml sweet chilli sauce

 

instructions

  1. Place the BAKERS Salticrax® crackers and parsley in a processor and process until fine. Transfer mixture to a shallow platter.
  2. Place the mince, beans, spring onion, cumin, coriander, yoghurt and soup powder in a bowl and mix well.
  3. Form into walnut-size balls and roll in the crumbs to coat.
  4. Heat a little oil in a large pan and fry the balls until golden brown and cooked through.
  5. Drain and sprinkle with the coriander leaves. Serve with the sweet chili sauce on the side.

250 g gemaalde maer beesvleis

250 ml geblikte rooi stamboontjies, gedreineer en effens fyngedruk

125 ml fyngesnyde sprietuie, net die boonste deel

10 ml geroosterde en fyngestampte komynsade

10 ml geroosterde en fyngestampte koljandersade

65 ml gewone laevet joghurt

½ pakkie bruin-uie soppoeier

’n bietjie kookolie om in te braai

125 ml gekapte koljanderblare

250 ml soet brandrissiesous

 

instruksies

  1. Plaas die BAKERS Salticrax® en pietersielietakkies in ’n voedselverwerker en verwerk tot fyn. Gooi die mengsel oor in ’n vlak sopbord.
  2. Meng die maalvleis deeglik met die bone, sprietui, komyn, koljander, joghurt en soppoeier. Rol die mengsel in okkerneut-grootte balletjies en rol dit dan in die krummels.
  3. Verhit ’n bietjie olie in ’n pan en braai die balletjies tot gaar. Dreineer en strooi die koljanderblare bo-oor. Bedien met die brandrissiesous.
