NUTTY HONEY CINNAMON CAKE

This spicy cake is made using BAKERS Tennis® biscuits, pecan nuts, vanilla and honey. Dusted with icing sugar, it’s a delicious and easy to make cake that’s a perfect teatime or festive treat.

Serves 8 – 10

150 g (¾ pack) BAKERS Tennis® biscuits

150 g (375 ml) pecan nuts

7,5 ml baking powder

10 ml ground cinnamon

large pinch salt

5 jumbo eggs, separated

200 ml sugar

5 ml vanilla essence

250 ml hot water

150 ml honey

90 ml castor sugar

ground cinnamon (extra)

icing sugar

 

instructions

  1. Pre-heat oven to 160 oC.
  2. Place the BAKERS Tennis® biscuits and pecans in a processor and process until fine. Transfer to a mixing bowl. Stir in the baking powder, cinnamon and salt and set aside.
  3. Beat the egg yolks with half of the sugar until pale and then add the vanilla essence.
  4. In another bowl, whisk the egg whites until soft peaks form then gradually add the remainder of the sugar, beating until the mixture is thick and glossy.
  5. Fold the egg yolk mixture lightly into the egg white mixture. Sprinkle the crumb mixture on top and fold in lightly.
  6. Pour the mixture into a greased 24 cm spring form pan and bake in the oven for 30 – 40 minutes or until a knife inserted comes out clean.
  7. Meanwhile, combine the hot water, honey and castor sugar and stir until the sugar dissolves. Spoon over the warm cake and allow to cool in pan. Remove cake from pan, dust with extra cinnamon and icing sugar and serve.

Hierdie spesery gegeurde koek gebruik BAKERS Tennis® beskuitjies, pekaneute, vanielje en heuning. Hierdie smaaklike en maklike koek, bestrooi met versiersuiker, maak dit perfek vir teetyd en feestlike genot.

150 g (3⁄4 pakkie) BAKERS Tennis® beskuitjies

150 g (375 ml) pekanneute

7,5 ml bakpoeier

10 ml fyn kaneel

groot knippie sout

5 jumbo eiers, geskei

200 ml suiker

5 ml vanieljegeursel

250 ml warm water

150 ml heuning

90 ml strooisuiker

ekstra fyn kaneel en versiersuiker

 

instruksies

  1. Verkrummel die BAKERS Tennis® beskuitjies en neute in ’n voedselverwerker tot fyn. Gooi oor in ’n mengbak. Roer die bakpoeier, fyn kaneel en sout by en sit eenkant.
  2. Klits die eiergele in ’n skoon bak met helfte van die suiker tot lig van kleur en voeg die vanielje by. Hou eenkant. Gebruik nog ’n skoon bak en klits die eierwitte tot sagte punte.
  3. Voeg die orige 200 ml suiker geleidelik by, hou aan met klits tot dik en blink. Vou die eiergeelmengsel liggies by die eierwitmengsel in.  Strooi die krummelmengsel bo-op en vou ook liggies in.
  4. Gooi die mengsel oor in ’n gesmeerde 24 cm- losboompan en bak in ’n voorverhitte oond teen 160 oC vir 30 – 40 minute of tot gaar. Meng dan die warm water, heuning en strooisuiker saam.
  5. Roer tot die suiker opgelos is. Skep lepelsvol oor die warm koek en laat dit in die pan afkoel. Verwyder die koek van die pan, bestrooi met ekstra fyn kaneel en versiersuiker en bedien.
