PARMESAN CRISPS WITH APPLE & GINGER CHUTNEY

Step aside chips and dip! Parmesan crisps, made with BAKERS Salticrax® crackers, have arrived!  A fantastic snack to serve up to guests before the meal.  Impressive on the plate and heavenly to taste!

ingredients

4 BAKERS Salticrax® Black Pepper flavoured crackers

100 g piece of real parmesan cheese

30 ml olive oil

1 small onion, finely chopped

1 cooking apple, cored, peeled and cut into 1 cm dice

30 ml finely chopped ginger root

5 – 10 ml red chilli flakes

65 ml sugar

30 ml white vinegar

salt and milled black pepper

  1. Pre-heat oven to 150 ºC
  2. Crush the BAKERS Salticrax® crackers finely and place in a bowl. Grate the cheese using the small holes (not the diamond-shaped holes, the miniature plain holes) of your grater and mix with the crumbs.
  3. Place tablespoonfuls of the mixture in small piles onto a non-stick silicone pad or a greased baking sheet. Make sure they are generously spaced out – at least 5 cm apart. Flatten the piles with the back of a spoon and bake on the middle rack of the oven  for 5 – 6 minutes or until golden. Remove from oven and allow to cool a little before removing the crisps with a spatula or palette knife. Cool completely on a rack.
  4. To make the chutney, heat the oil and add the onion and apple. Sauté until soft and translucent then add the rest of the ingredients except the seasoning. Bring to the boil, reduce heat and simmer for 10 – 15 minutes or until the apples are tender (but not mushy) and the liquid has reduced and thickened. Season to taste and serve with the parmesan crisps.

100 g heel stuk egte parmesaankaas

30 ml olyfolie

1 klein fyngekapte ui

1 appel, ontpit, afgeskil en gesny in

1 cm-blokkies

30 ml fyngekapte gemmerwortel

5 – 10 ml rooi brandrissievlokkies

65 ml suiker

30 ml wit asyn

sout en gemaalde swartpeper

  1. Breek die BAKERS Salticrax® in fyn stukkies en sit dit in ’n bak. Rasper die kaas met ’n rasper met klein gaatjies.
  2. Meng die kaas met die krummels en pak lepelsvol van die mengsel in klein hopies op ’n kleefvrye silikoonplaat of ’n gesmeerde bakplaat. Maak seker dat hul ten minste 5 cm uitmekaar is. Druk die hopies plat met die agterkant van ’n lepel.
  3. Bak dit op die middelste rak van ’n voorverhitte oond teen 150 ºC vir 5 – 6 minute of tot goudbruin. Haal uit die oond en laat effens afkoel. Verwyder die skyfies met ’n spatel of ’n paletmes. Plaas op ’n draadrak om af te koel.
  4. Om die blatjang te maak: verhit die olie en voeg die ui en appel by. Soteer tot sag en glasig en voeg die res van die bestanddele, behalwe die sout en peper by. Bring tot kookpunt, verlaag die hitte en prut vir 10 – 15 minute of tot die appels sag is (maar nie pap nie) en die vloeistowwe verdamp en verdik het. Geur na smaak en bedien met die parmesaan-skyfies.
