PEAR & GINGER CHEESECAKE

Using BAKERS Ginger Nuts®, this tasty take on the traditional cheesecake is a perfect combination of sweet pear, zesty ginger and tangy cottage cheese.

1 x 200 g packet of BAKERS Ginger Nuts®

90 ml melted butter

1 x 410 g can pears

65 ml preserved ginger, finely chopped

2 x 175 g tubs creamed cottage cheese

180 ml castor sugar

3 medium eggs

200 ml sour cream

30 ml lemon juice

To prevent spillage, place your loose-bottomed baking rings and spring form pans onto a large baking sheet before you add any filling. And leave it on the sheet until your dish comes out of the oven. Easy cuisine!

  1. Pre-heat oven to 160 oC
  2. Place the BAKERS Ginger Nuts® biscuits in a processor and process to fine crumbs. Add the melted butter and pulse until combined. Push the mixture into the bottom and the sides of a greased 24 cm diameter spring form pan.
  3. Drain the pears and reserve one pear for decoration. Chop the remaining pears coarsely and combine with the ginger. Spread the mixture on the crust and set aside.
  4. Whisk the cottage cheese and sugar until smooth, add the eggs and whisk again. Add the sour cream and lemon juice and mix well. Pour into the crust.
  5. Bake in the oven for 25 – 30 minutes or until the filling is just set. Remove from oven and allow to cool before removing the cake from the spring form pan.
  6. Slice or chop the reserved pear and garnish the cake.

  1. Verkrummel die BAKERS Ginger Nuts®s in ’n voedselverwerker. Voeg die gesmelte botter by en verwerk tot goed gemeng. Druk die mengsel op die boom van ’n gesmeerde 24 cm-deursnee losboompan. Dreineer die pere en hou een uit as versiering. Sny die orige pere in stukkies en voeg die gemmer by. Sit die stukkies in die kors. Klop die maaskaas en suiker tot glad. Voeg die eiers by en klop weer. Voeg die suurroom en suurlemoensap by en meng goed.
  2. Skep die mengsel oor die pere en gemmer in die kors. Bak in ’n voorverhitte oond teen 160 oC vir 25 – 30 minute of tot die vulsel net-net gestol het. Haal uit die oond en laat afkoel.
  3. Verwyder die koek uit die pan (net voor opdiening), sny die orige peer en versier die koek daarmee.
  4. NS: Om te voorkom dat enige losboompan in die oond mors, plaas dit op ’n groot bakplaat voordat jy enige vulsel byvoeg en hou dit op die plaat totdat dit uit die oond kom.
