PYRAMID CHEESECAKE

Make this innovative and delightful cheesecake recipe using BAKERS Tennis® biscuits, loads of lemon flavour and glacé cherries. Drizzle with melted chocolate for an extra special surprise.

Serves 8 or more

125 g butter

250 ml castor sugar

1 small egg

250 g creamed cottage cheese

10 ml finely grated lemon rind

15 ml lemon juice

15 BAKERS Tennis® biscuits

15 glacé cherries

200 g milk chocolate (optional)

 

instructions

  1. Cream the butter and the sugar until pale and smooth. Add the egg and beat well. Mix in the cottage cheese, lemon rind and juice. If necessary, place mixture in the fridge until firm.
  2. Arrange the BAKERS Tennis® biscuits, side-by-side, in three rows of five on a large sheet of foil. Make sure their pretty sides face the foil.
  3. Spread the cottage cheese mixture onto the biscuits. Place the cherries in a line down the centre spacing them evenly.
  4. Raise the biscuits from the outside with the help of the foil and fold towards each other to form a triangle with the filling in the middle. Wrap the cheesecake firmly in the foil and freeze.
  5. If using, melt the chocolate and spread over the sides of the cheesecake. Wait for the chocolate to set, cut into slices and serve. Otherwise, slice and serve as is.

10 ml gerasperde suurlemoenskil

15 ml suurlemoensap

15 BAKERS Tennis® beskuitjies

15 geglaseerde kersies

200 g wit sjokolade (opsioneel)

  1. Klop die botter en suiker saam tot lig van kleur. Voeg die eier by en klop goed. Meng die maaskaas, suurlemoenskil en -sap by. Indien nodig moet die mengsel in die yskas geplaas word om stewiger te raak.
  2. Rangskik die BAKERS Tennis® beskuitjies in drie rye van vyf op ’n groot stuk foelie. Maak seker dat die bo-kant van die koekies na die foelie toe wys. Smeer die maaskaasmengsel op die beskuitjies. Rangskik die kersies in ’n reguit lyn in die middel. Lig die beskuitjies van die buitekant af na binne met die hulp van die foelie. Vou na mekaar om ’n driehoek te vorm. Draai die kaaskoek stewig in die foelie toe en vries.
  3. Haal die kaaskoek uit die vrieskas (net voor opdiening) en verwyder die foelie. Indien jy sjokolade gebruik, smelt die sjokolade en smeer dit oor die koek. Laat staan die koek ’n paar minute sodat die sjokolade kan stol. Sny die koek dan in skyfies en bedien dadelik.
