Give your family a lunch or dinner treat with this Smoked Chicken Quiche.

Serves 8 or more



1 x 200 g packet of BAKERS Salticrax® crackers, crushed

90 ml melted butter


30 g butter or margarine

2 large leeks, thinly sliced

250 g cream cheese

250 ml sour cream

5 XL eggs

2 x  smoked chicken breasts, roughly chopped (approx. 300 g)

250 ml grated cheddar cheese

5 ml oregano

50 ml chopped parsley

salt and pepper

garnish – extra chopped parsley

  1. Pre-heat oven at 160⁰C.
  2. Combine cracker crumbs and butter and press into a greased 23mm spring form pan and chill.
  3. Melt butter and sauté leeks until soft and cool.
  4. Beat cream cheese, sour cream and eggs together.
  5. Add leeks and all remaining ingredients.
  6. Pour mixture into prepared biscuit base and bake for 50-60 minutes or until set.
  7. Serve warm or cold with a green salad.
