SPRING ONION, SPINACH & MOZZARELLA BITES

Make these deliciously warm Spinach & Mozzarella Bites, using BAKERS Kips® crackers that drip with cheese from the centre. Great for party platters!

Makes about 20

ingredients

100 g (1/2 pack) BAKERS Kips® Spring Onion flavoured crackers

65 ml olive oil

1 – 2 large garlic cloves

125 ml basil leaves

250 ml firm mashed potato

500 ml cooked spinach, drained well and chopped

salt and milled black pepper

ground nutmeg

250 g mozzarella cheese, cut into 2 cm cubes

 

instructions

  1. Pre-heat oven at 190 ºC.
  2. Process the BAKERS Kips® crackers olive oil, garlic and basil in the processor into coarse crumbs.
  3. Mix together the mashed potato and spinach and season well with the salt, pepper and ground nutmeg. Take a spoonful of the mixture and flatten it slightly in your hand. Place a cube of mozzarella in the centre of the mixture and fashion it around the cheese into a ball.
  4. Roll the ball in the crumb mixture, patting the crumbs into the ball. Continue until you have used all the spinach mixture.
  5. Bake on a greased baking sheet in a oven for 10 – 15 minutes or until the cheese inside has melted. Serve warm

1 – 2 groot knoffelhuisies

125 ml basiliekruidblare

250 ml gaar, fyngedrukte aartappel

500 ml gaar spinasie, goed gedreineer en gekap

sout en gemaalde swartpeper

fyn neutmuskaat

250 g mozzarellakaas, gesny in 2 cm-blokkies

  1. Verkrummel die BAKERS Kips®, olyfolie, knoffel en basiliekruid in die voedselverwerker en gooi dit oor in ’n sopbord.
  2. Meng die gaar, fyngedrukte aartappel en spinasie en geur mildelik met sout, peper en fyn neutmuskaat. Skep ’n lepelvol van die mengsel in jou hand en druk dit effens plat.
  3. Plaas ’n mozzarellablokkie bo-op en vorm ’n balletjie met die kaas in die middel van die spinasiemengsel. Rol die balletjie in die krummelmengsel. Herhaal totdat die spinasiemengsel opgebruik is.
  4. Bak op ’n gesmeerde bakplaat in ’n voorverhitte oond teen 190 ºC vir 10 – 15 minute of totdat die kaas binnein gesmelt het. Bedien warm.
