VEGETARIAN BURGERS


Enjoy one of SA’s Favourite with a twist.  Vegetarian patties made with BAKERS® Cream Crackers.

Serves 8 or more

 

30 ml oil

1 onion, finely chopped

2 cloves garlic, crushed

10 ml curry powder

2 small courgettes grated

20 BAKERS® Cream Crackers, finely crushed

1x 410g can chickpeas, drained

1 egg, beaten

30ml chopped coriander

salt and freshly ground black pepper

flour

oil for shallow frying

 For Serving:

fresh burger buns

Greek yogurt

side salad

 

  1. Heat oil and gently sauté onion and garlic until soft.
  2. Add curry powder and cook for 1 minute.
  3. Add courgettes and cook for 2 minutes.
  4. Place onion, courgettes and crumbs in a bowl.
  5. Place chickpeas, egg and coriander into a processor and roughly process add to onion mixture.
  6. Season to taste and refrigerate for at least 1 hour.
  7. Shape into burger patties and dust with flour.
  8. And fry until golden brown.
  9. Serve on a plate with a burger bun with a spoonful of Greek yoghurt or serve patty with yoghurt and a salad.
